Every time I’m in London, I head straight to Whole Foods (this comes as no surprise to all you loyal blog readers).
One of my favorite foods has become their cracklin’ cauliflower. It’s cauliflower with an Indian kick and I assume it’s unique to the London WF stores.
Initially, I Googled the recipe, but didn’t have much luck. But, the last time I was there, I inadvertently got some to take back with me on the plane; I quickly realized the ingredients were listed on the weight sticker (duh!).
I tried out the recipe immediately upon my return to my kitchen, but it just wasn’t the same.
This weekend, I made it again, and I’m happy to announce the results are very close to what I got at WF.
The original recipe calls for:
- red onion
- coriander
- fennel
- ginger
- lemon
- garlic
- curry powder
- garam masala
- salt and pepper
- oil
This time, I was too lazy to pull out the recipe, so I just went from memory. Which means I forgot about half of the ingredients (red onion, ginger, lemon, garlic). So basically, I just used the spices.
But it worked (the picture doesn’t do it justice–this stuff should be called crack cauliflower because you just can’t stop eating it. seriously. you need to make this recipe).
My lesson in the kitchen (also applicable to life): don’t try so hard to get things perfect. Relax, and in the end, things will turn out just fine.
