I spent this sunny, cool fall afternoon in the kitchen making muffins, spaghetti squash and seeds, brussels sprouts, roasted almonds…it was a very productive day.
I always realize how much I miss the opportunity to bake on a Sunday when I’m away. It’s such a calming pleasure for me.

Pumpkin spice muffins (adapted from Elana’s Pantry recipe)
1/4c coconut flour
1/2t baking soda
salt and spices
3 eggs
1T coconut oil
1/4c applesauce
a big drizzle of honey
1/2c pumpkin (I cooked a pumpkin today–saving the can for later–since I’ve started rationing things like that)
