Zucchini

I’m still doing laundry. I started on Thursday and it’s now Saturday. I am happy to report, though, that my towels aren’t scratchy and hopefully my socks won’t be either!

While I’ve been sitting around waiting for the laundry to dry (literally), I’ve been playing around with my blog. You might notice a few small adjustments. I bought a completely new design and had it installed last night, but after a few Google searches, I was able to make updates myself to the current design. Why can’t I remember to use Google BEFORE I spend money?

One of my favorite changes are the buttons on the right that link to my Pinterest, Instagram, Goodreads and email (still figuring out email, but the button’s there for now!). These are the social media platforms I update regularly–all with different kinds of info. I’m pretty sure I’m connected to most of you, but if not, let’s link up!

There are still more updates and design changes I’d like to make, but I see this blog as a work in progress, always evolving. Plus, who has time to play around with html code all day (insert nerdy snort and push glasses up nose). Actually, I do…as long as I’m stuck here with my clothes in the dryer.

As for zucchini. It’s the same word in German! Finally, a word I can remember! I’ve been going to town with the enormous zuke my friend dropped off on Monday.

– Two loaves of coconut flour banana walnut chocolate chip zucchini bread
– A concoction of shredded zucchini, sweet potato, onion, chopped turkey, slivered almonds and egg. Cooked in a pan on the stove, great for dinner, lunch and breakfast
– Zucchini latkes–shredded zucchini, egg, almond flour pancakes with a little quark on top
– Zucchini crust pizza–shredded zucchini mixed with an egg and a bit of almond flour, baked and topped with tomatoes, basil, mozzarella and olive oil

I still have some that I need to do something with. I’m thinking oven-baked zucchini sticks. Zucchini has effectively replaced schwein in my diet for now.

This weekend looks to be another one of staying home, hanging with friends and continuing to get settled. September is packed with visits from American friends and trips to different cities, so I’m enjoying the calm before the exciting storm.

I just finished Sue Monk Kidd’s The Invention of Wings and I highly recommend it. I didn’t know it was historical fiction when I started, and I probably wouldn’t have picked it up on my own, but my mom sent it to me…and mom knows best. Next up is Michael Pollen’s The Omnivore’s Dilemma. I can’t believe I’ve never read this book and I’m excited to see how it will influence my new thoughts about meat and the foods I’m eating with more frequency over here (bread, dairy, döner kebab). I think I’m most excited that I got it on my Kindle. The Invention of Wings was great and all, but I toted that huge book around every day. Time to take a load off!
